It’s no secret that I’m a baseball fan. I don’t exactly share the same passion for football, but my husband is a huge fan, where I enjoy the more social aspects of the game (read: watch parties). In fact, our girls know Super Bowl Sunday is the only day of the year they’re allowed to eat in the living room (yes, we are strict).
I’ve been making the same party recipes for longer than I’ve known my husband, so I decided to mix it up a little bit this year and put together this dip that is addicting and couldn’t be simpler.
- 1 large avocado (or two small)
- 1/2 cup Shamrock Farms Lowfat Cottage Cheese
- 1/2 cup salsa of choice
- 1 Tbsp. taco seasoning
Mash half of the avocado and cut the remaining half into cubes. Mix cottage cheese, salsa and taco seasoning together with the mashed avocado. Stir in the remaining avocado. That’s it!
I will be the first to admit that my preferred way to eat cottage cheese is in lasagna. But I took a taste of this dip, offered a taste to my husband, and then proceeded to sit down at the table and eat nearly the entire bowl. It will definitely make an appearance on our coffee table during the Big Game this year.
