After the girls and I picked 13 lbs. of peaches on Memorial Day, we had to figure out what the heck to do with all of them.
The first thing I did was look up How to Freeze Peaches. I went through the whole bag, and pulled all the ripe peaches and prepped them for freezing. (This was possibly a mistake, because that night Pumpkin asked for a peach and all the ripe ones were in the freezer. Note to self to leave a couple out next time!)
We’ve been using the frozen peaches in our smoothies.
I don’t really follow a recipe for smoothies – just throw in a little of this and a little of that. This one was yogurt, almond/coconut milk, banana, spinach and peaches.
If it’s not thick enough, throw in a few more peaches. Or some berries. Oatmeal smoothies are good, too. Whatever you like!
Now, we just had to wait for the rest of the peaches to ripen. It didn’t take too long!
Topped a whole wheat bagel with cream cheese and peaches.
Added peaches to my Grape Nuts and almond/coconut milk.
And for lunch, a salad of greens, peaches, blueberries, avocado and pecans with a little drizzle of balsamic. Yum!
We actually didn’t get tired of peaches. In fact, I think my family that I didn’t make any peachy desserts … but there’s always the grocery store!
