The girls and I were grocery shopping last weekend when I saw a St. Patrick’s Day balloon in the image of the heart-eyes emoji. I had just bought a set of emoji cookie cutters, and I knew I had to make this as a cookie given my girls’ emoji love.
I forgot one thing … I am actually terrible at royal icing. I think know where I go wrong, too. I don’t roll out the cookies evenly to begin with, and then I never get the consistency on the icing just right – too thick for the piping, too thin for the flooding. Maybe someday I will have more time (or patience!) to get it just right. (Bake at 350 has some great royal icing tips if you’re just learning, too.)
But even though they didn’t turn out perfect, I still think they make a fun St. Patrick’s Day treat, so maybe someone else will be able to use this idea and do it justice. And on the plus side, the girls don’t see the imperfections and LOVED them! (It helps that they taste great, too!)
