This week was busy as ever, and toasty, too! We had three days in a row of record heat, which resulted in very little cooking and lots of cool treats.
Week in Review, June 19-25
Pumpkin continued swim lessons this week and she did such a great job that she’s moving up a level for her next session. I’m so proud of my little fish!
I chatted with Peanut‘s teacher at drop-off one morning this week and found out that she is the little classroom mommy, making sure the other kids have what they need at meal times and sometimes even patting their backs to help them sleep at nap time. I thought that was so sweet! | A college friend of mine came through town briefly this week as her family is moving across the country, and we were able to squeeze in an ice cream date so our girls could meet for the first time. It was really fun to catch up and see the kids play together! | The girls and I went to Scottsdale Quarter Saturday morning to get some treats from the Hello Kitty Cafe Truck. The timing was maybe not ideal for an outdoor event (the high on Saturday was 115) but we made it through the line with water and snacks and enjoyed our sweets at the end.
Between the heat, swim lessons, and Mr. G working a few evenings, I spent more nights at the drive-thru than at my stove this week. For Sunday dinner, I put together a family favorite – a DIY Pasta Salad. I can’t remember where I first saw it, and I’ve probably posted about it before, but it’s brilliant because everyone gets to build their own and the kids love it. Serve some cooked pasta, some proteins, some veggies, some cheese, and some sauce and there you go. Ingredients can easily be swapped out. You can see in the pic what we served this week. Other times, we’ve also incorporated bell peppers, carrots, hard boiled egg, ham or turkey, etc. Sometimes I’ll just put out the pasta for the girls and build myself a salad instead. Our preferred sauces are pesto (me), ranch dressing (Peanut) and Alfredo sauce (Pumpkin and Mr. G). This week, I used the Penne Beet Carrot Sweet Pea from Decio Pasta that came in my swag bag from last week’s Shop on the Hill blogger event, and it was great!
I’m living in my LuLaRoe Carly dresses (literally wore the pink one twice this week) because it’s just too hot for waistbands.
I started watching Jane the Virgin after it was already in season 2, and it quickly became one of my favorites. It’s like a telenovela/sitcom hybrid. It’s kind of silly, but also has a lot of heart, plus absurd storylines – but I grew up watching soap operas in the summertime with my grandma (I’ll still watch The Young and the Restless on occasion) so I love it. And I feel like, even though the characters do some awful things, it’s somehow hard to hate them. I’m only a few episodes in to season 3 (now on Netflix), but I feel like there’s some good character development going on. And Grease songs!
A friend gave me Mindy Kaling’s “Is Everyone Hanging Out Without Me?” a couple years ago and I finally just started reading it. So far, it’s a quick read and pretty funny. There are some fairly universal themes about growing up and friendship, plus some things I relate to personally, and others I don’t but still find entertaining.
